If your new year’s resolution is to be healthy, then this recipe is for you. It’s simple, delicious, and you can guarantee you already have the main ingredient in the back of your cupboard.

1.     Take as much of the pasta, any style you like, and add to a pan of boiling water, for about 10 minutes.

2.     While the pasta is cooking, chop up 1-2 cloves of garlic, lemon juice, olive oil, basil and salt (on the off chance that you have one, feel free to use a food processor or blender).

3.     Now for the avocado: there will be a pit in the middle, cut into the avocado as far as you can, length ways all the way around and then hold in both hands and twist in opposite directions. It should open easily, so remove the pit and scoop out the insides, and mash together (or add to the food processor).

4.     When the pasta is cooked, drain the water and add the sauce to heat, finishing off with a bit of pepper and lemon zest.

It’s great for a power boost at lunch time and, remember, it tastes nicer than it looks!
