As the temperature starts to drop, soups are the best option to warm us inside for those cold nights ahead. This sausage soup is simple and cheap to make as well as being really tasty to boot. Feel free to spice it up or add other vegetables and flavours to it. Have it with some pasta or bread and enjoy!
Fills up – Four average people or two REALLY HUNGRY PEOPLE
For The Base
- 1 tablespoon of oil
- 1 small onion (sliced or chopped)
- 1 carrot (chopped or ribbons)
- ½ courgette (chopped or ribbons)
- 2 tomatoes (chopped)
- 2 mushrooms (sliced)
- 2- 4 garlic cloves (crushed)
- 2 mugs of water
- 1 beef stock cube (chicken if you’re using turkey sausages)
- 4 large pork or turkey sausages (chopped, diced or whole)
- Salt, pepper and some other herbs
For The Dumplings
- 1 mug of flour
- ½ mug of water
- Salt & pepper
Directions
- Start by making the dumplings first. Mix flour, salt & pepper in a bowl and add the water until you form to a soft ball of dough and set aside.
- Prepare the vegetables as mentioned above.
- Now, to start making the base of the soup, heat the oil in a saucepan and fry the onions, carrots, tomatoes, courgette and mushrooms.
- Mix stock cube and water together and then add to the saucepan. Boil for 5 minutes.
- Bring down to a simmer. Take the dough made earlier and separate it into roughly 8 smaller balls and add to the saucepan. Let the soup cook for about 10 minutes and then it’s ready.
